There was an article in Business Week last month about a company that
provides software that "automatically translates flat photos into 3-D
replicas. It uses algorithms developed by Synthonics founder Charles
S. Palm to construct a so-called wire frame model of the photos, then wraps
a photo around this skeleton."

    You might try:
    - photogrammetry (taking stereo pictures of the horse from different
    angles). I recall someone advertising recently they could generate
    3D data from photos for a fee).
    - Moire Fringe scanners. I believe there are a couple of companies
    selling these kind of scanners which may be able to operate in a
    single
    shot mode.
