You should try to contact TracerCad http://www.tracercad.com
They produce fast scanners for the prostetic industry.
I am sure they have some 3D data of amputaded limbs for you.
I hope they will give it for free.

Subject: any arms or legs out there?!!
Dear all,
I am looking for some free 3D data of amputated limbs (arms or legs!) for an
undergraduate student project. Does anyone know where I can find any. It's very
difficult to get a person to sit there while a cmm machine prods them for three
hours!!!
