How could there possibly be enough information in just a front and side photo
to reconstruct a 3D surface?!?

Maybe if you knew the position and nature of the light source, you could
do a 'shape from shading' thing - but you cannot both reconstruct the
shape AND deduce the light position. You have to know one or the other.
