This depends on the quality of the CNC controller used.
Using simple controllers you do indeed have to choose between accurate
and smooth. More expensive controllers do have a nice feature
called a 'look ahead buffer', which analyses the next say 20 positions to
be milled, and slows down in case a sharp corner is being approached.
The result is a very smooth movement at constant (high) speed in case
possible, and a slow decelleration and acceleration where needed.
